From the South?


I am starting to think Talin may be from the Old South;)
He is now calling me "Mama"
"Please Mama", "Mama!" "Mama!"
Hahaha:)
It makes me laugh!:)

My boys are the plainest eaters. It makes it so hard for me to cook.
I found this awesome recipe for Parmesan Chicken!
You cut them up so they are bite size
I call them fancy nuggets and the boys love them!:)
I hope you enjoy them as much as we do:)

  • 1 clove garlic, minced
  • 1 stick unsalted butter (1/2 cup or 1/4 pound), melted
  • 1 cup dried bread crumbs
  • 1/3 cup grated Parmesan cheese (or 2/3 cup if you are using a Microplane zester)
  • 2 Tbsp chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic salt
  • A large pinch of Italian seasoning (herb mix)
  • 1/8 teaspoon ground black pepper
  • 2 lbs of skinless, boneless, chicken meat, cut into pieces no larger than 2x2 inches
1. Preheat oven to 450°F. Pat the chicken pieces dry with paper towels.

2. In a bowl, combine the minced garlic with the melted butter. In another bowl mix together the bread crumbs, Parmesan, parsley, salt, garlic salt, Italian seasoning, and pepper. Dip chicken pieces into garlic butter, then into crumb mixture to coat.

3. Place coated chicken pieces on to a 9x13 baking dish. Try to leave a little room between each piece. Drizzle with remaining garlic butter and bake uncovered 15 minutes, or until chicken is cooked through and juices run clear. Note that the chicken will get much more browned on the bottom side than on the top.

Soccer Time


We signed Ben up for Soccer this Spring.
I don't know who is more excited, us or him;)
We have been waiting for a call
from his coach and just received it.
There is no practice...?
His first game is in a week...
Guess we need to get a few family practice games
in before then;)

Something New

I know it has been a while...
I lost the program to download my pictures
so I haven't done a blog in a while.
But here I am:)

Jame and I had the opportunity to sub
in the twins primary class yesterday!
I know they are only four but It has been
a while for me;)
Needless to say it went great
and I really shouldn't get nervous.
It was a breeze!

Lesson Learned # off the charts;)= Just go with it!

Gingerbread Houses


I helped out in Ben's class today for his Christmas Party
and we made gingerbread houses with gram crackers:)
I told Ben that I was going to take his home with me
then as I left so that it would have a better chance
of making it home without falling apart.
"Yeah, that's a good idea Mom. It will be safer with you," he says.
I get in the car and set it down and it all collapses:}
So we went to the store and got stuff to make our own:)
When we got home Talin climbed up on the stool to help me unload
and took a dump to the floor and cut open his bottom AND top lips:(
So the house making got put off until a lot later...
